Grilled Cheese Waffle Sandwich

Time: 45 minutes Yield: 6 4” waffle sandwiches   


  • 1 Package Pancake & Waffle Mix
  • 2 ½ c. Non-Dairy Milk
  • ½ c. Safflower Oil (or other neutral oil)
  • 1 Package Vegan Cheddar Slices

DIRECTIONS: Preheat your waffle iron. Add the entire bag of mix into a bowl and create a well. Add in milk and oil. Mix until only small to medium lumps remain and let the batter rest for 5 minutes. Pour about ⅓ cup of batter into preheated waffle iron and bake based on manufacturer's instructions. Once waffles are cooked, remove from waffle iron and set aside. Construct your waffle sandwich using vegan cheddar slices, tomato, basil, or any other fillings. Grill using a panini press until the cheese has melted. Serve immediately.
