Cinnamon Raisin Waffles

Yield: 6 Waffles 


1 Package Pancake & Waffle Mix

1 tsp. Cinnamon 

2 ¼ c. Non-Dairy Milk 

½ c. Safflower Oil (or other neutral oil)

1 Tbsp. Apple Cider Vinegar or Lemon Juice 

1 tsp. Vanilla Extract

½ c. Raisins


Preheat your waffle iron. Add the entire bag of mix into a bowl, add cinnamon and create a well. Add in milk, oil, vinegar and vanilla extract. Mix until only small to medium lumps remain. Fold in raisins and let the batter rest for five minutes. Pour about ⅓ - ½ cup of batter into preheated waffle iron and bake based on manufacture’s instructions.
