Strawberry Vanilla Bean Cake

Time: 45 mins Yield: 9” Pan


  • 1 Package Cake & Cupcake Mix
  • 1 c. Non-Dairy Milk
  • ¼ c. Safflower Oil, or Other Neutral Oil
  • ¼ c. Applesauce or 1 Egg
  • 2 tsp. Vanilla Beans, Scraped
  • 1 ½ c. Fresh Strawberries, Chopped


Lightly spray a 9x9 baking pan and set aside.  Preheat your oven to 375°. Add the entire bag of mix to a bowl and create a well. Add in the milk, oil, applesauce and scraped vanilla beans. Mix until only small lumps remain. Fold in strawberries. Pour batter into your prepared pan and bake for 40-45 minutes or until a toothpick comes out clean. Serve with your favorite whipped topping!
