Lemon Poppyseed Bundt w/ Lemon Glaze

INGREDIENTS

  • 1 Package Cake & Cupcake mix
  • 1 c. Non-Dairy Milk
  • ¼ c. Safflower Oil (or other neutral oil)
  • ¼ c. Applesauce or 1 Egg
  • 2 Tbsp. Lemon Juice
  • 1 Tbsp. Lemon Zest
  • 2 Tbsp. Poppyseeds

GLAZE

  • 1 . c. Powdered Sugar
  • 3 Tbsp. Lemon Juice
  • ½ tsp lemon zest

DIRECTIONS: Preheat oven to 350°. Grease or oil a bundt pan and set aside. Add the entire bag of mix to a bowl and create a well. Add in the milk, oil, applesauce, lemon juice and zest. Mix until only small lumps remain, then fold in poppyseeds. Pour batter into your prepared pan and bake for 45-50 minutes or until a knife or toothpick comes out clean. While the bundt is baking, whisk your glaze ingredients together until smooth. Allow the bundt to cool for 25 minutes then remove from pan and drizzle the glaze over it.
