Chocolate Cake or Cupcakes
Time: 45 mins Yield: 1 dozen cupcakes or one 9” pan
INGREDIENTS:
- 1 Package Cake & Cupcake Mix
- ⅓ c. Cocoa Powder
- 1 c. Non-Dairy Milk
- ¼ c. Applesauce or 1 Egg
- 2 tsp. Vanilla Extract
- ¼ c. Safflower Oil (or other neutral oil)
DIRECTIONS: Preheat oven to 350°. Grease or line your desired pan. Add the entire bag of mix and cocoa powder to a bowl and create a well. Add in the milk, oil, applesauce and vanilla extract. Mix until only small lumps remain. Pour batter into your prepared pan and bake for your selected item:
Cupcakes: 350° for 22-24 minutes • 9” pan: 350° for 30-35 minutes.
