Peanut Butter Cup Brownies

Time: 35 mins Yield: 12 Brownie Cups


INGREDIENTS:

  • 1 Package Brownie Mix
  • 1 Package Mini PB Cups
  • ¼ c. Safflower Oil (or other neutral oil)
  • 2 tsp. Vanilla Extract
  • ¾ c. Non-Dairy Milk
  • ¼ c. Applesauce or 1 Egg

DIRECTIONS: Preheat oven to 350°. Spray or line a dozen muffin pan and set aside. Add the entire bag of mix to a bowl and create a well. Add in the milk, applesauce, oil and vanilla extract and mix until only small lumps remain. Scoop a dollop of batter into the bottom of the pan or liner, set the PB cup into batter, then top with more batter to cover. Bake for 22-25 minutes or until a toothpick comes out clean.
