Chocolate Zucchini Loaf

Time: 1 hour 15 minutes

Yield: 1 loaf



  • 1 Package Brownie Mix
  • ¾ c. Non-Dairy Milk
  • ½ c. Zucchini (grated)
  • ½ c. Safflower Oil (or other neutral oil)
  • ¼ c. Applesauce 
  • 2 tsp. Vanilla Extract
  • 1/2 c. Chocolate Chips (optional)

DIRECTIONS: Preheat oven to 375°. Grate your zucchini and squeeze out all the excess liquid, set aside. Spray a loaf pan and set aside.  Add the entire bag of mix to a bowl and create a well.  Add in the milk, applesauce, oil, vanilla extract and mix until only small lumps remain.  Fold in zucchini (and chocolate chips if using).  Pour batter into your prepared pan and bake for 1 hour or until a knife or toothpick comes out clean.
