Savory Muffins

Time: 45 mins Yield: 9 muffins 

Ingredients:

  • 1 ½ c. All-Purpose Flour Blend
  • ½ c. Corn Meal
  • 2 tsp. Baking Powder
  • 1 tsp. Salt
  • ½ tsp. Smoked Paprika
  • ½ tsp. Garlic Powder
  • ½ tsp. Black Pepper
  • 1 ½ c. Non Dairy Milk
  • 1 Tbsp. Apple Cider Vinegar
  • ⅓ c. Olive Oil
  • ½ c. Green Onions, Diced
  • ⅓ c Vegan Cheddar Shreds
  • ⅓ c. Red Bell Pepper, Diced
  • ⅓ c. Sausage or Tempeh Crumbles

Directions:

Preheat the oven to 350 degrees.  Spray or line a muffin pan and set aside.  Mix dry ingredients together through seasonings.  Finely chop the green onions, bell pepper and sausage and toss in a small bowl with the cheddar shreds.  Add the wet ingredients into the dry and mix until just combined.  Fold in the add-ons and mix again just enough so it’s all evenly distributed.  Scoop a rounded ¼ cup of batter into your muffin pan and bake for 25-30 minutes or until a toothpick comes out clean.
