Time: 30 mins Yield: 12-15 cookies
Ingredients:
- 2 ¼ c. All-Purpose Flour Blend
- 1 tsp. Baking Soda
- 1 tsp. Sea Salt
- 1 c. Vegan Butter
- ¾ c. Cane Sugar
- ¾ c. Brown Sugar
- 1 tsp. Vanilla Extract
- 1 Flax Egg* (or other egg substitute)
- 1 c. Dark Chocolate Chips
Directions:
Preheat your oven to 350 degrees. Add Flour, baking powder and salt into a bowl and whisk to incorporate. In the bowl of your stand mixer (or in a bowl with a heavy spoon), mix the butter and both sugars together until they become fluffy, scraping down the sides as needed. Add in your egg replacer and the vanilla extract, then mix until incorporated. Add in your flour mixture in two parts, mixing until the flour is combined. Fold in your chocolate chips. Scoop dough onto a parchment lined baking sheet and bake for 12-15 minutes.
*Mix 3 Tbsp. water with 1 Tbsp Ground Flax and allow to thicken.
