Apple Cinnamon Coffee Cake

Yield: 12 Slices  


Coffee Cake:

3 c. All Purpose Flour Blend

1 ½ c. Sugar

1 Tbsp. Baking Powder 

1 Tbsp. Cinnamon 

1 tsp. Baking Soda

½ tsp. Salt

1¼ c. Non-Dairy Milk 

1 c. Applesauce 

½ c. Safflower Oil (or other neutral oil)

1 Tbsp. Lemon Juice 

2 tsp. Vanilla Extract

1 c. Apples, peeled and chopped 


1 c. Flour

½ c. Brown Sugar 

½ c. Gluten-Free Oats

½ tsp. Cinnamon

¼ tsp. Salt

⅓ c. Safflower (or other neutral oil)


Preheat oven to 350° degrees. Line or spray a 9x13 pan and set aside. Mix all of your crumble ingredients together, including oil, and set aside. Add dry ingredients and whisk to combine. Make a well in your dry ingredients and pour in your wet ingredients. Mix until only small lumps remain.  Fold in the apples.  Pour batter into your prepared pan and evenly sprinkle the top with crumble.  Bake for 40-45 minutes or until a knife comes out clean.
